Tomato Bruschetta

INGREDIENTS

  • 4 slices of good quality plain bread
  • Rastrello Extra Virgin Olive Oil (EVOO)
  • 2 garlic cloves (peeled)
  • A handful of cherry tomatoes (chopped in quarters) · Salt & pepper for seasoning
  • A few leaves of fresh basil (chopped)

PREPARATION

  1. Toss the tomatoes together with 2 tablespoons of EVOO, a pinch of salt and pepper, and basil.
  2. Toast your bread and rub the garlic cloves directly on the toasted bread.
  3. Drizzle with EVOO; sprinkle with a bit more salt; and add the tomato mixture.
